vegetables-2We want your 2016 to be filled with laughter, love and good health! Our Caprese Caps recipe is just one step to you having a healthy start to the new year. These baked disks of tastiness are not only easy to make but can be a great leftover to chop up and toss in with a bed of mixed greens.

 

Happening Kitchen: Caprese Caps

Ingredients:

• 4 Large Portabella Caps
• 1 Large Ball of Fresh Mozzarella, Sliced
• 1 Roma Tomato, Diced
• 1/2 Cup Fresh Basil, Chopped
• Olive Oil
• Balsamic Vinegar
• Salt & Pepper

Preparation:

  1. Preheat oven to 375°
  2. Line baking sheet with foil and lightly drizzle with oil to prevent sticking
  3. Place portabella caps evenly on baking sheet
  4. Drizzle caps with olive oil and balsamic vinegar then sprinkle with salt and pepper
  5. Top caps with 1-2 slices of mozzarella per cap, tomato and basil
  6. Bake for 20-25 minutes until cheese is melted and begins to brown
  7. Remove from oven, rest for 5 minutes and serve

Tip: Turn this simple dish into a full meal by slicing baked caps and tossing with cooked pasta dressed with olive oil and grated Parmesan cheese!
