Healthy & Homemade: Beet & Goat Cheese Salad

These earthy and delicious roots are usually seen in a gelatinous form from a can or pickled in a jar, one of the tastiest ways to enjoy beets are when they are roasted in the oven. These edible roots are full of flavor and provide numerous nutritional benefits. Sometimes the most simple of preparations can provide a meal bursting with flavors. Here’s our recipe for a delicious beet and goat cheese salad created from ingredients all found at the NC State Farmers Market!

Beet & Goat Cheese Salad
Serves 2 / Prep Time: 10 min  /  Cooking Time: 60-90 min, depending on size of beet

  • Ingredients:
    • 1 medium/large beet (skin on), attached greens optional
    • 2 tablespoons goat cheese, crumbled
    • 1/2 bag of spinach, spring mix or any lettuce of choice
    • 2 tablespoons balsamic vinaigrette dressing
    • 1 teaspoon olive oil
    • salt & pepper to taste
  • Preparation:
    • Preheat oven to 400°F
      • If your beet still has the greens attached cut them off less than 1 inch above the beet. Wash and chop the greens to add a hearty texture to your salad.
    • Gently wash the beet under running water, do not puncture skin, and pat dry
    • Coat beet with olive oil and season with salt and pepper
    • Wrap beet in foil and place in baking dish, bake on center rack for 60 mins
      • Beet should be slightly soft to the touch, if still firm continue to cook another 20-30 min
    • Remove beet from oven and cool
    • Once beet has cooled enough to pick up with your hands begin to peel the skin, it should come off easily
    • Slice or cube beet
    • In a large bowl mix together lettuce (and beet greens), goat cheese and dressing
    • Plate dressed salad and stop with beets

If you want to add another layer of texture try adding chopped walnuts or slivered almonds!
