Healthy & Homemade: Breakfast Frittatas To Go

kitchen_recipebookThis protein packed breakfast is great to prepare the night before and bake in the oven while you get ready in the morning. The options are endless as far as mix-ins! Use leftovers or extra lunch meat to give them an extra protein kick or keep it veggie-based with fresh seasonal ingredients.

 

  • Breakfast Frittatas to Go
    Makes 12  l  Prep Time: 15 Minutes  Baking Time: 25 Minutes

    • Ingredients:
      • 12 eggs
      • 1/4 cup heavy cream
      • 3 tablespoons coconut oil
      • 1 cup onion, diced
      • 1 garlic clove, finely diced
      • 6 ounces of breakfast sausage, broken into small pieces
        (We recommend the Mild Country Sausage from Mae Farms)
      • 3/4 cup sweet peppers, diced
      • 1 cup fresh spinach
      • 1 cup crimini mushrooms, sliced
      • 1 cup shredded cheddar
      • Salt and pepper to season
    • Directions:
      • Preheat oven to 350ºF
      • In a large mixing bowl beat together: eggs, heavy cream, salt and pepper
      • Melt 1 tablespoon of coconut oil in a skillet over medium heat. Saute onion, garlic and breakfast sausage until lightly brown
      • To the same pan add peppers, spinach and mushrooms to the pan and cook until mushrooms are soft and begin to brown, remove from heat*
      • Grease a muffin tin with the remaining 2 tablespoons of coconut oil
      • Fill each cup 1/3 of the way with sausage and vegetable mixture
      • Pour egg mixture into each cup until almost to the top
      • Place on middle rack in oven, bake for 20 minutes
      • Sprinkle cheddar on top of each muffin and bake for another 5 minutes until cheese is melted
      • Cool slightly, serve immediately

*If prepping the night before baking, put vegetable/sausage mixture in a mixing bowl and refrigerate both mixtures until 30 minutes before baking
