Healthy & Homemade: Chicken Salad

kitchen_recipebookSince the weather has begun to cool off and we’re all fighting to have just an extra few minutes of warmth in bed every morning; this recipe will cut a few minutes off your morning routine since you make it the night before. Chicken salad is easy to make and even easier to get creative with. Make this a family activity and have the kids help you shred the chicken!


Chicken Salad
Serves 4  l  Total Time: 20 Minutes

  • Ingredients:
    • 1 Whole Roasted Chicken (Purchased at local grocery store)
    • 3/4 Cup Celery, Chopped
    • 1/3 Cup Red Onion, Diced
    • 1/2 Cup Mayonnaise
    • 2 Tablespoons Lemon Juice
    • 2 Teaspoons Dijon Mustard
    • 1 Teaspoon Garlic Powder
    • Pinch of Paprika
    • Pepper & Kosher Salt to taste
  • Directions:
    • Pick the meat from the roasted chicken and shred it into a bowl, should yield about 3 cups
    • Add in celery and red onion and mix to combine
    • In another bowl combine mayonnaise, lemon juice, dijon mustard, garlic powder, paprika, pepper and salt
    • Add mayonnaise mixture to chicken and mix gently until combined
    • Refrigerate overnight until ready to use

Our Tips:

  • Feel free to add in chopped nuts, sliced grapes or apples before refrigerating
  • Serving suggestion:
    • Lightly toast 2 slices of Old Fashioned White Pan Bread from La Farm Bakery
    • Lay down a small bed of arugula on one slice of bread
    • Add 3-4 slices of avocado, 2-3 slices of uncured bacon and 1 scoop of chicken salad
    • Top with second slice of bread and enjoy!
