Healthy & Homemade: Granola

RH_HealthyHomemade_GranolaIf you were at the amazing Not So Normal 5K race this past Sunday you would have seen our Editor-in-Chief, Joni Grana, greeting runners and supporters with bags of homemade granola! Apparently the healthy snack was a hit because several people have reached out for the recipe and what kind of magazine would we be if we didn’t give it you?!

The recipe is based off of the Every Day Granola recipe that was seen in the June 2010 issue of Bon Appétit but we made a few tweeks to make it our own.

Healthy & Homemade Granola
Serving Size: 1/3 cup  (15 servings per batch)
Prep Time: 10 Minutes
Bake Time: 40 Minutes

  • Ingredients:
    • 3 Cups Old-Fashioned Oats
    • 1/2 Cup Slivered Almonds
    • 1/2 Cup Coarsely Chopped Pecans
    • 1/2 Cup Unsweetend Shredded Coconut* (Found at our local Harris Teeter)
    • 3 Tablespoons Light Brown Sugar (Packed)
    • 3/4 Teaspoon Ground Cinnamon
    • 1/2 Teaspoon Ground Ginger
    • A little less than 1/4 Teaspoon Kosher Salt
    • 1/3 Cup Honey
    • 2 Tablespoons Vegetable Oil
    • 2/3 Cup Dried Cranberries
    • 2/3 Cup Raisins
  • Kitchen Items:
    • Large bowl or stand up mixer with paddle attachment
    • Spatula
    • Parchment paper
    • Baking sheet
    • Cooling rack
    • Small saucepan
  • Preparation:
    • Preheat over to 300°F.
    • Prepare a baking sheet by lining it with parchment
    • In a large bowl (or using your stand up mixer) combine oats, almonds, pecans, coconut, brown sugar, cinnamon, ginger and salt
    • Over medium-low heat add vegetable oil and honey into a small saucepan and stir until smooth
    • Pour honey mixture over the oat mixture and toss to coat
    • Pour oat mixture onto prepared baking sheet, use spatula to spread into an even layer
    • Bake for 40 minutes, stirring every 10 minutes (will be golden brown when ready)
    • Place sheet on cooling rack
    • Add dried cranberries and raisins
    • Combine and allow to cool completely

*Do not use sweetend coconut or else your granola will be too sweet
