Healthy & Homemade: Pork Tenderloin

RH_dinnerPork is one of those meats that is so versatile you can do a lot with a little. This recipe is one of my favorites, it is SO simple and easy that you can whip it up anytime you are in the need of a quick meal. Let’s face it, not all of us have the time to make an elaborate dinner every night. This recipe will save you time and leave your family asking for seconds!

Pork Tenderloin

  • Ingredients:
    • 1 pork tenderloin (between 1 1/4 – 1 1/2 lbs)
    • 1 tbsp olive oil
    • 1 tsp onion powder
    • 2 tsp garlic powder
    • 1 tsp dried rosemary
    • 1 tsp dried oregano
    • 1 tsp dried thyme
    • 1 tsp ground cumin
    • 1/2 tsp ground black pepper
    • Salt to taste
  • Preparation:
    1. Preheat oven to 450°F
    2. Pat pork loin with a dry paper towel to remove excess moisture
    3. In a small bowl mix together all dry ingredients
    4. Massage the rub evenly on all sides of the tenderloin (this will help to keep the rub on the pork)
    5. Heat olive oil in a large skillet over medium-high heat
    6. Place tenderloin in pan and brown on all sides (about 10 min total)
    7. Place pan (or transfer to roasting dish) and bake for 20 mins
    8. Remove from oven and let rest for 5 mins
    9. Slice and serve over a bed of rice and vegetables
