Healthy & Homemade: Portobello Pizzas

Portobello_MushroomsSummer meals are probably some of our favorites because the flavors from a charcoal grill just add an incredible layer of flavor to everything you grill. This month’s recipe is so versatile because you can choose your own toppings AND your own cooking method! Portobello Pizzas make the perfect snack or meal especially when you just want something quick, easy and healthy.

The preferred cooking method is the oven (350°F for 15 minutes) but if you have the extra time and charcoal try cooking these bad boys up on the grill. The mushrooms will absorb a smokey flavor that really bumps up the whole meal.

Portobello Pizzas

  • Servings: 2 portobello caps per person
  • Prep Time: 10 minutes
  • Cook time: 10-15 minutes
  • Ingredients:
    • 4-6 Portobello mushrooms
    • Fresh mozzarella cheese
    • Between 3/4 – 1 Cup Tomato Sauce (We like locally handcrafted Nello’s Sauce)
    • Olive oil
    • (Optional) Additional topping suggestions: sausage, pepperoni, olives, garlic, onions, bell or sweet peppers… you get the idea
  • Preparation:
    1. Preheat oven to 350°F or fire up your grill to a medium-high heat
    2. Line a backing sheet with foil and spread over a little olive oil
    3. Remove stems from mushrooms and using a spoon lightly remove the gills under the cap by scraping across them, be careful not to dig into the ‘meat’ of the cap
    4. Place the caps on the baking sheet top-side down
    5. Spread 2 tablespoons of sauce evenly on each cap
    6. Add cheese and additional toppings
    7. Bake in oven for 15 minutes, cheese should be completely melted and toppings should be well heated
      1. If grilling, brush a little extra oil on the grates and place the caps directly on the grill
      2. They will be ready when cheese is melted and the caps pull off easily from the grates

Bonus: Want something a little different? Try substituting the tomato sauce with pesto!
