Healthy & Homemade: Simple Superbowl Favorites

footballEven if you aren’t a huge fan of the Denver Broncos or Seattle Seahawks, chances are you will be watching the game. We’ve come up with a couple of simple and delicious Superbowl recipes you can make ahead so you can be there for kickoff! While these dishes teeter on the indulgent side we think you won’t mind after tasting them. Enjoy!

Spicy Chili

Serves 6-8  /  Prep Time: 15 min  /  Cooking Time: 1:45 – 2hrs

  • Ingredients:
    • 5 slices thick-cut bacon, cut into 1/2 inch pieces
    • 2 onions, chopped
    • 8 cloves of garlic, diced
    • 2 bell peppers, chopped
    • 2 jalapenos, diced
    • 1lb ground beef (85/20)
    • 1lb ground pork
    • 3 tablespoons chili powder
    • 1 teaspoon ground coriander
    • 1 teaspoon onion powder
    • 1 tablespoon ground cumin
    • 1 tablespoon cayenne powder
    • 2 teaspoons dried oregano
    • 1 teaspoon dried thyme
    • 1 tablespoon smoked paprika
    • 1 bottle of beer
    • 1 cup chicken stock
    • 3 cups crushed tomatoes
    • 1/3 cup tomato paste
    • 15 oz can black beans, drained
    • 15 oz can pinto beans, drained
    • Salt and pepper to season
    • Optional Toppings: Shredded cheese, sour cream, sliced scallions, lime/lemon wedges and avocado
  • Preparation:
    • In a large pot over medium-high heat, brown the bacon
    • Add in onions, bell peppers, jalapenos and cook until tender, 5 mins
    • Add garlic and stir for 1 minute, do not burn garlic!
    • Add ground beef, break it up using large spoon or spatula
    • Once beef starts browning add in ground pork also breaking that up allowing it to brown until cooked through, 5-6 mins
    • Stir in spices: chili powder, ground coriander, onion powder, ground cumin, cayenne powder, dried oregano, dried thyme and smoked paprika, cook for 2 mins until fragrant
    • Stir in beer, beans, tomatoes and tomato paste
    • Turn burner down to low and simmer for 1hr 45mins, season with salt and pepper to taste
    • Serve with crusty bread and optional toppings

Buffalo Chicken Dip

Serves 6-8  /  Prep Time: 10-15 min  /  Cooking Time: 25-30 min

  • Ingredients:
    • 8 ounces cream cheese
    • 1/2 cup celery, finely chopped
    • 1/2 cup hot sauce
    • 1 cup cooked chicken breast, shredded
    • 1 cup blue cheese, crumbled
  • Preparation:
    • Preheat oven to 425°F
    • Melt the cream cheese in a saucepan over medium heat, about 3-4 minutes
    • Stir in celery, hot sauce and chicken until mixed
    • Pour into 9 inch baking dish and sprinkle blue cheese over the top
    • Bake until bubbling hot, 25-30 mins
    • Serve with celery and carrot sticks
